Most home chefs are familiar with hangar steaks, These are long course grained cuts from the plate primal or the cow;s belly. There is moderate marbling which adds juiciness while the overall flavor is intensity beefy with a subtle mineral edge. A more popular and affordable cut is the flank cut .It has moderate marbling, a bold beef essence and a tender bite when cut against the grain.
