A Day of Hope A Day of Help

What happened twenty-five years ago in lower Manhattan cannot even be described. It was horror at the very least, pure evil at it's most intensive. Yet it united this country  - and made the US more caring in those months afterwards. We cared for each other ,for those we knew and didn't know back then. We need to bring that back - especially when feeding America.

There is hope today that we can strive to be better again. We can hope that all this decisiveness ends and we go back to the united country we once were.Yet how -? By the easiest way possible. Food.Eating has always brought us together. We have to have three meals to survive,.We have to have snacks and drinks to enjoy our events. Now we need to think about helping each other. There is so much food insecurity right now. Children and the elderly are going hungry . Students are having their school breakfasts cut. We need to act and react to what is going on. Federal funding is being cut from SNAP - Supplemental Nutrition Assistance Program and families' food supplies are dwindling.Local purchasing programs are also having their budgets slashed which means pantries cannot buy fresh meats and produce. If you can- write to your local congressmen and senators.Participate in protests.Donate to your local food pantry if you can >If you have a bumper crop in your garden  - donate.

Restaurants and supermarkets can also help. Many restaurant owners across the country realize that people can't even afford a slice of pizza or a hot dog. So many of these little pizzerias and Mom and Pop hamburger shacks are allowing for a free meal. It;s a chance for those who are going without to have some kid of treat . Also restaurants can also donate to food pantries as well if they have any overage.Another idea is that churches ,synagogues ,mosques and even schools can have a big pot luck dinner. Everyone is invited and of they want to bring  a dish they can.Emphasize that bringing anything is not mandatory.Families can get their fill of nutritious foods with the possibility of bringing home leftovers. This is a great way too to get to know parishioner s and the community. Colleges can have this as well for both students and locals. It;s a fun way to integrate the town and gown crowd.College cafeterias have big kitchens and these can easily be used to create these dinners as well as using the cafeteria in the off hours and weekends.

THis is a day of hope. This is a day of help .Help those who have food insecurities however you can. Let's be a united states' once more.

The Comfort Of A School Lunch

This upcoming school year is going to be fraught with all sorts of anxiety. A comforting school lunch can help ease some of those fears and stresses. Classic sandwiches, hot meals and snacks may bring a smile to those worried faces.

Fun lunches and riffs on cafeteria classics can easily be recreated at home. This is great if the kids are returning to classrooms right away and need to bring a lunch. Egg and tuna salad sandwiches are staples in any school and even college cafeterias. For the egg salad spike it up with some parsley or paprika for color. Tuna salad can be crunched up with the addition of celery which also gives it a shot of green too.Of course kids love bologna and turkey too. Many love the squish of both mayo and mustard. Combine these for a new condiment with the addition of toasted mustard seeds. The last  are easy to toast. It's just five minutes in a 350 degree Farenheit oven. Of course there is the loved for generations peanut butter and jelly . Vary it with crunchy peanut butte or all natural kinds. Change it up with either cashew or almond butter if the little ones are OK with that. (Keep in mind that some will freak out if you replace one kind of peanut butter with another). Get sandwich cutters to give them a festive look. what's good about these is that the cutters also seal in the filling so it doesn't squish all over the place. These will also come in handy when the little and not so little ones return to the classroom.

Some kids may not be returning to their classrooms until October or November. This means a hot or more substantial lunch. This is where your crockpot can come in handy. Make a big pot of chili for dinner one night and lunch the next (also remember that it can be used to top hot dogs too). Think about making crockpot tomato sauce which can be used over such kid favorites as spaghetti and ravioli. Kids love a good steamy bowl of tomato soup. Sure you can open a can but homemade is better - and much more flavorful. It's just taking plum tomatoes and cooking it with either chicken or vegetable broth. There's also diced onions, seasonings and garlic to round out the flavors. It's all stirred and cooked in the crockpot for six to eight hours.Grilled cheese is another kid favorite. Add a slice of ham for a croque monsieur vibe. Older kids may like it the French bistro version with a bechamel sauce on top. Bechamel is an easy blend of milk, butter and flour. Salt, pepper and nutmeg are the seasonings that elevate it. You could serve it with bistro fries or shoe string potatoes for a really fun lunch.

Start this  unprecedented school year off with familiar foods for lunch. It can be a hot soup or a cold PB & J sandwich. Whatever they like as long as it's a comfort to them.

Navigating Your Cafeteria

Everybody has to have cafeteria food sooner or later. It's one of the toughest eateries to wander through and find so ethnic tasty ,neatly and even safe.It can be done.Just choose carefully and you'll be fine. Cafeterias are usually busy between noon and one PM. If it's a large company one ,the it may open at seven or eight AM and serve breakfast. However don't expect an omelet bar and fancy granola. You will get scrambled eggs probably along with bacon and maybe sausage. They may even have hot oatmeal. Stick with this last because there's no grease or worry of salmonella .Most cafeterias have rolls, bagels , croissants and muffins.I'd say choose these. They're the safest and also filling. Some cafeterias will also have fruit plates such as university ones. This is an excellent breakfast or even snack. Lunch is another tricky path. Some colleges offer healthy choices ,taking into consideration vegans along with religious beliefs. Some, along with bigger companies offer a wide array of hot and healthy meals. Try chicken breast or salmon with rice , if you have the choice. If your work or school has veggies or turkey burgers try them every now and again. Safe bets are usually grilled cheese without bacon.Try to avoid overly greasy burgers along with anything with mayo. Some cafeterias keep stuff too long and you don't know how long some thing has been there. if it tastes bad or funny bring it back and demand a refund. Most cads wi Give you your money back. There are going to be days when you have to rely on your school or office cafeteria.Choose wisely and you'll be OK. You, your stomach and taste buds will survive
