Your Yard Your New Grocery Store

 Surprisingly enough Sping gives you  a whole new grocery to explore.It/s a breeze to visit and it;s fun to walk through .Where is it Your Front and back yards// There are so many local plants to try .These make for interesting salads.

Before you go vront and back yard foraging there are a few cautions to follow.DON"T eat anything  you've sprayed with pesticides. Make sure everything I s"clean", that is chemical free.Use guide books or Apps like INaturalist to make sure what you;re picking isn;t toxic or harmful.Also think about local contamination.Are they a lot of dogs and cats in your area? They may use your Yard as their private bathroom, Life on a busy street means a lot for exhaust that can settle on plants.    Think twice then about picking from the  front area. The back may be a safer  - and cleaner choice.Also  good thing to remember is that your neightbor property is just that their property. Don;t go into  their yards with a basket ,(unless you have their permission) to pick plants. Another point to consider is that if you go into the woods remember that there are also non poisonous and poisonous plants existing together. Be extra careful with what you choose. Again the INaturalist app will come in easy here. Critters abound in your neighboring woods too.I;ts the start of copperhead season if you;re in New Jersey.. Be on the lookout for bears , cougars  raccoons and mountain lions. The woods are their property really, not yours.

What kind of plants should you pick. Think dandelions. These are carpeting lawns right now with bright yellow flours. These can be plucked, rinsed offed and then batter dipped. Air fry or fry in butter or olive oil for crunchy ,fun bites. They taste like popcorn and are a great with a dip. Don;t forget the dandelion greens.These make for a tasty ,nutrient rich salad.Choose younger leaves because they;re sweeter tasting and have a more tender texture. They may still be a tad butter but this can be solved by making a less acidic dressing. Just go light on the lemon juice or vinegar.These are great with a hot bacon salad, that has crispy bacon and sliced hard boiled eggs.You can also try them in a simple Mediteranean  salad or on e loaded with yummy walnuts.Nettles actually make for good salads too. Add chickpeas for protein  and dress with a za' atar laced dressing for a spicy side perfect with lamb or chicken.  A forager's salad with all these greens from your back and front yards. Toss in some grilled chicken or tuna for protein along with hard boiled eggs. Think of it as a rustic salad Nicoise , especially with the addition of tomatoes (which will come from your curated garden in a few months.

Your Yard is your grocery store. Look at the green that you have an d use them. They are not only free but delicious and good for you.

A Classic Air Fried

 Baked potatoes are great as a side or loaded to make for a perfect dinner. Even better is air fried baked ones that elevate it to a new level of tastiness. Once you'v had these, you will not want them any other way,

I decided to try this , craving a Wendy's baked potato. I found a good recipe at www.natashaskitchen.com. I tweaked the recipe for more flavor. It starts with two meaty baking potatoes.

Keep in mind you'll need to scrub them good.I used just cold water and a paper towel, but you can also use a vegetable scrubber to get rid of the dirt too.

These have been washed and waiting to be coated.
I rubbed them in olive oil and then used a rub of sea salt and pepper.Make sure the skins are completely covered in this mix. Poke holes in them using a fork with sharp tines or the tip of a sharp knife. Doing such will prevent them from exploding in the air fryer basket avoiding a mess.



It was then air frying them. This can be tricky, The website recommends cooking them for first thirty minutes at 400 degrees Farenheit, then flipping them over  and cooking for another fifteen minutes.I did this and after the second baking/frying, they were still not done. A knife is supposed to sink into a thoroughly baked one.It didn't with these. I had to cook them an extra fifteen minutes again at 400 degrees to get them sift inside.Now I realize that they needed to be cooked for forty-five minutes for a fluffy, cooked interior.
The wait was well worth it. The inside was food magazine perfect, the skin , crispy and flavorful like a potato chip.

I had mine with a big dollop of Melt plant butter and broccoli.

It was also good loaded with the broccoli , butter and Good Foods Nacho dip. You can add anything to these, from chili to butter to sour cream. I am a new big fan of these spuds.  Normally I don;t eat the skins. However this crispy version is tasty. The whole potato was gone.

Air frying is the only way to bake potatoes.It  gives the skins a wonderfully crispy outside while maintaining that meaty white perfection inside. Try them today fro a meal or a side.

Your Own Hot Doughnuts

 One of the best fall treats is a doughnut. It's the perfect snack or even breakfast on a chilly day. Homemade ones are even better.The bite is fresh and deliciously chewy,

Any good home baker can create a doughnut.You can make it with yeast for one with  a chewy bread like crumb or a cakey one that's more like your favorite slice. A basic recipe for the yeast variety has milk and two packets of yeas t mixed with two eggs and a stick of melted butter. You will need flour , usually the all purpose kind,More flour will be needed to roll out the dough into rolls. Keep in mind you will need a deep fryer for this and two quarts of a neutral oil like grapeseed or vegetable oil. Can you air fry doughnuts? You can. Just generously spray the basket with a neutral spray in either vegetable or butter flavor. This may be a bit tedious to do. Only two doughnuts at a time can be fried and  they have to be flipped midway through the baking process. The plus side is that they won't leave a greasy after taste and the texture is crisper on the outside, tender on the inside. Another plus is that you can also air fry cake batter doughnuts too, They come out just as good as their yeast cousins, The air fryer also works for doughnut holes too. The yeast ones take forty five minutes to rise and six to eight minutes to bake at 375 degrees Farenheit.

Cake doughnuts are another treat. The recipes are more varied than the yeast recipe as are the textures. Cake doughnuts can be as dense in crumb as a muffin or as light and fluffy as a birthday cake. You can create more flavors with cake doughnuts. A good cake doughnut recipe is made with flour, and baking powder which gives them lift. Usually one egg is used along with milk. You can fry them but look for an evenness in color and texture. Baked doughnuts are another way to go. Get a doughnut tin which has different shapes, from fluted edges to a regular circle. If you don't have one simply use a muffin or cupcake tin with foil in the middle to create the hole. Apple cider doughnuts are big right now and it's just adding concentrated apple cider. DO NOT add cider straight from the jug. You'll need to reduce it to a thick and potent syrup. This is done by boiling it down for twenty minutes.It's then added to the batter. You can also add an apple pie spice blend of nutmeg, cinnamon and cardamon. After they've been baked brush with melted butter and dredge in a mix of white sugar and cinnamon.

This is the season for doughnuts. Make them at home for a fresh, sweet treat. You can fry , air fry or bake the yeast or cake variety for a tasty bite full of satisfying sweetness.

A Pescatarian Life

People are eschewing red meat in large quantities, preferring healthier and more sustainable eating habits.The problem is that they still crave the occasional burger or filet. There can be an alternative - an in between the carnivore and herbivore diets. It's pescatarianism -  a diet heavily relying on fish.

Pescatarian diets may be the best bet for those transitioning from meat eater to plant eater. It's actually more healthful than a vegan or vegetarian diet. It has all the good green stuff  like veggies but also the much needed omega-3 fatty acids that come from salmon, mackerel, herring, and fresh tuna. Adding more fish means lower risks of heart attacks, type 2 diabetes and obesity. Keep in mind that a pescatarian does have some risks.You will have to either take iron supplements or increase your intake of spinach and broccoli, veggies high in iron. Also consider eating more low sugar cereals which are also fortified with it.Another risk that may concern some is the threat of mercury. It's damaging to the central nervous system so eat no more than four helpings of oily fish a week. Stay away from swordfish and marlin because they contain the highest levels of the substance. Luckily tuna and shrimp have the lowest. As for shellfish, yes pescatarians can have all the "good" seafood like crab, shrimp and lobster. These are usually served with just lemon or cocktail sauce for dairy adverse eaters. Also another thing to keep in mind is that a fish only diet can be expensive, especially if you live a ways inland.

What dishes can pescatarians try? Grilled salmon is always delicious and there are so many different recipes out there. Try it pan fried with just salt and pepper or a squeeze of lemon. You could also add some grated ginger, sliced scallions and soy sauce. This would be a great dinner with rice and shredded cabbage salad. Salmon is also a great sheet pan ingredient. It's good roasted with asparagus and fingerling potatoes. Try it with peppers, tomatoes and eggplant in a kind of ratatouille base.Cod is another fish that's versatile and can be made a variety of different ways. Many love it battered and deep fried but you can also make it healthier with air frying. It just has to be well seasoned, namely with sea salt and freshly ground pepper. Just spray the fillets with olive oil for moistness and to get them crisp without battering.. Of course pescatarians can treat themselves to the lush seafood - the crustaceans. Lobster fra diablo is a delicious treat and perfect for a holiday meal. It's a spicy blend of the lobster meat, fennel, garlic and red pepper flakes blended with tomatoes and tomato paste. It's served over spaghetti or angel hair pasta. Another luxe dinner is shrimp scampi. This garlic rich dish is usually made with butter but there are plant based butters, especially Miyokos' (sold at Target) that you can use to cook the shrimp.

A pescatarian life can be a good one. You may be giving up one type of protein but eating another. It's a healthy and delicious transition from meat eating to a kind of vegetarianism.

Barbecue Leftovers Now What

All those Memorial Day barbecues  lead to one thing - leftovers. if you're lucky the guests ate everything or brought home containers of salads and sides. They even may have taken home dessert for a late night snack. Yet what happens when none of that happens? What do you do with the barbecue leftovers?

Luckily extra burgers and dogs can be stored in the freezer or fridge and turned into a quick lunch or dinner. To jazz them up a bit, add bacon and cheddar to the hamburgers for a flavorful meal. As for the hot dogs.think chili or even salsa. Cheese dogs are a nice change up from plain ones and the kids won't complain about another hot dog meal.Split the dogs, add shredded cheddar and wrap with bacon for a totally decadent meal. You could also slice them and add them into a veggie or potato soup. Leftover steak? If it's cooked then slice and cut into bite size bits for salad. Add in ripe red Roma tomatoes and onions  dressed in a simple red wine vinaigrette. Barbecued chicken is good cold and can be repurposed as a no cook dinner with any left over salads and sides. The next question is what to do with the sides? Surprisingly potato salad can be roasted to produce crispy already seasoned chunks, Just rinse off any extra mayo - they'll need some for roasting and then pop them into a cast iron pan and roast at 425 degrees Farenheit. If you have any leftover veggies then , think tempura. Green beans and tomatoes dipped in batter and air fried  is a nice snack for movie night.

Sometimes there's extra dessert. Hard to believe but true.Barbecues always have fruit as the last course. Sometimes you overbuy , or guests bring fruit platters. If you have a lot of watermelon in the fridge , then think healthy slushie. It's a simple mix of crushing ice cubes in a blender, then adding watermelon cubes and just a drop of honey. It's a refreshing repurposing  and perfect on a hot day. You can do the same with any leftover cantaloupe too. Add a tablespoon or two of almond milk to make it creamy. Add a shot of vodka or gin for some zing.If there are any grapes left over, freeze them. They're great  as frozen bonbons and a nice icy hit when the temps rise. Sometimes you buy a lot as I did with the coconut milk based ice creams.I went out and bought waffle bowls along with Smucker's hot fudge sauce for sundaes. Add the coconut milk Reddi-Whip and all those scoops make for a fun treat.As for those famed chocolate wafers , they're just good on their own as a nice lunchtime dessert or afternoon snack. Of course they can be crushed and used as a sundae or cone topping.

Don't freak out at those Memorial Day leftovers. They can be recooked and repurposed into tasty new dishes and treats. They'll even be better a second time around.
