Good Beach Treats

 This is beach season, n dougt about it. It's a fun time, being out in sun and sea air. The last somehow creates an appetite and that means satsisfying . Time to bring the cooler full of cool drinks and good food.

Regular contributir, cookbook author and actor Naz Deravian wrote about the perfect beach picnic in yesterday's New York Times Food section.It all starts with the right cooler. Choose one with a large insulated interior.Lauren Rivard, founder of the Picnic Collective , a picnic catering company out of Costa Mesa, California strongly suggests avoiding coolers with multiple compartments like those soft collapsable coolers with various sleeves and pockets. These take up space. As far as the containers for sandwiches, dips and treats, use  lightweight , reusable containers that fit into your cooler. (Any store has these) DO NOT use glass ones. These are heavy and not safe to use outdoors. Remember to place the heavier, perishable items at the bottm, then slip in the smaller rounder shaped ones like cans and thermoses in mooks and crannies. TO keep the cooler from loosing its' cool,Alanna O'Neil a photographer on Maui and the author of "The Art Of Picnics: Seasonal Outdoor entertaining." recommneds freezing all your water , sodas and juices the night before. This knot only chills what's on top of them but creates a nice even base. They also melt less quicker than ice cubes.

What foods should go into the cooler? Beach proof ones.Think sturdy foods that can stand hours outside without getting soggy.wrap sandwiches in parchment paper and then place in baggies to reduce condensation. Ms. Deravian gives two recipes. One is for am artichoke and olive farro salad. The recipe calls for farro,a hearty grain which travels well. It has marinated artichokes and olives along with crumbled feta and red onions. You could add chopped bell peppers and halved grape tomatoes too. You can sub in orzo too or make a tasty orzo - veggie salad with tomatoes and broccoli florets. There is also a ranch dip, perfect with those bags of potato chips or chilled crudiutes. It's made with full fat Greek yogurt,garlic, dill and chives along with Kosher salt. A tablespoon of lemon juice gives it zing. What about dessert? Think chill grapes, watermelon and pineapple chunks.  Ms Rivard recommneds adding a  thermos of chilled coffee or tea in an insulated flask for a pick me up along with those indiviually wrapped RIce Krispie treats for a sugar rush. These can be bought or homemade.

It's beach weather . Head to it with a cooler of good food and chill drinks.It's perfect for enjoying the sea and sand.

Gearing Up For Picnic Season

The warm weather brings the urge to eat outside.There's nothing like a relaxing picnic on the beach or in the park .Yet a meal al fresco isn't just a sandwich on a bench .It's much more and if you want an enjoyable, trouble free one,you're going to have to have some gear.It's up to you to make it as simple or involved. The first step is having some kind of container for your grub.It can be as basic as a Styrofoam cooler you can buy at your local supermarket or as fancy as a British hamper from Williams Somona.The last will come with actual china plates, cloth napkins and cutlery.It's perfect for impressing a date or doing a picnic Downton Abbey style.However if it's not you, don't buy it.A better option is a cooler on wheels which can be bought at any Target or K-Mart.It will have room for ice which means you can easily store bottled drinks along with salads and sandwiches.It's good for the more involved meals that include meats for grilling and any mayo based dish.Another idea is a portable grill.Most picnic spots do have them, however many picnickers want their own to cook on.Get a decent easy to handle portastove that will last for several years.It can be used again in the fall for tailgating season.Also buy one that has two grills for cooking both burgers and dogs. There seems to be some division on utensils.Some people like the idea of plastic while others tend to use their house sets for dining outside.Plastic breaks ,especially the knives,rendering themselves useless when cutting steaks or even chicken breasts.Ditto for forks .The tines have a tendency to break off too if you're stabbing something tough.Bringing the utensils from home is not a good idea either.They could get lost.The best bet is heading down to your dollar store and purchasing cutlery from there.Knives and forks won't be as flimsy as the plastic ones yet not as precious as say the family silverware.The dollar store can also provide you with spatulas, larger knives and ladles..These also come in handy when you need extras for big holiday dinners.As for containers, invest in cheaper plastic containers with snap on lids for salads and even meats. You don't have to use the good Pyrex or even Tupperware. Nothing beats a relaxing meal al fresco.However for it to be enjoyable you do need some basics.A few simple containers, easy to handle cutlery and and ice filled cooler makes it easier to dine in the great outdoors.It'll make for a more enjoyable meal.

Picnic Time is Summertime

Nothing is quite so much fun as a summer picnic. You can have a fun one in the sand and surf or a civilized one under the stars. Food can be as simple as heroes and chips or as sophisticated as cold chicken with pesto sauce and champagne. The fun part about picnics is to be creative. Have old standards mix with new favorites.

Before you even being to buy your food, make sure you have a good cooler. There are several to choose from these days. Luckily most places like Target and K-Mart have them on sale. Pick one that you can easily haul with you to the beach or the park(something on wheels and can fit into your car's trunk is probably the most desirable).Make sure that it can carry not just food but drinks as well. There are some high tech ones that have radios and I Pod stations for music. However sometimes just sticking with the simplest is best. For more elegant picnics there are the traditional wicker hampers. These come with china and utensils as well as napkins and ground coverings. This is great if you always want to eat "out" in style however fully stocked hampers can range from $200 to $300.

Once you've bought your cooler then you can plan your picnic. Make sandwiches that day so they're fresher tasting. A lot of people make them the night before and somehow they become soggy after ten hours the fridge Heroes are always preferred. They're fun to eat plus you can put a medley of diff rent cold cuts and veggies on them. As far as as dressings, mustard and ketchup are your safest bets along with oil and vinegar. Mayo is fine if you have a good cooler that will keep the sandwich chilled (otherwise it's a quick run to the ER - a difficult maneuver if you're in the woods or at the beach).If you're thinking about bringing salads then make these the night before. Instead of mayo, think about a tangy raspberry vinaigrette for your slaw or Italian dressing with sliced peppers and onions for your macaroni sandwiches. Pack chips, popcorn or tortilla chips. Keep drinks simple with juice boxes or canned soda.As for dessert, another keep it simple course. Have fun blueberries, strawberries or even cookies that the kids can grab and munch. Leave out Popsicles and ice cream bars which can be messy.

For a more elegant picnic, think cold meats. The English have this cornered with their hampers full of sliced ham and cold roasted chicken. You can also indulge in a Tuscan outdoor meal. Pack prosciutto or mortadella along with a loaf of crusty Italian bread. What's a good side with any of these? A crisp string bean and minced onion salad in a vinaigrette dressing. Also have on hand sliced tomatoes.This is the kind of meal that calls for champagne. If you want bring it along with a cooler and plenty of ice. Keep dessert simple with melon slices and shortbread cookies.

This is the season for a picnic. You can make it as all American as a hero with chips or as elegant with cold chicken breast and chilled drinks. Just make sure it's fun time out in the fresh air.
