Easy and French cuisine rarely are heard in the same sentence. Yet you can create tasty Gallic influenced foods in no time at all. There are many dishes that can be whipped up without a maximum of toil and trouble. They're not only great mais tres facile!
Crepes are one of the easiest French dishes to make. The batter can be made anywhere from an hour to a night before and let stand. All it it takes is flour, melted butter or olive oil and a cup of milk along with salt and two eggs. Crepe batter is similar to pancake batter but should be a tad thinner (this comes from a good whisking). Lightly grease a crepe or regular frying pan and that's it. Finish with a sprinkle of sugar and cinnamon for a sweet meal. You can also stuff crepes with shredded ham and cheddar cheese and let the hot crepe cook them up. Another idea is filling crepes with canned chicken ala king. This makes for a really yummy dinner and one even kids will enjoy. You can also saute tomatoes , squash,eggplant and onion together for a quick ratatouille filling .
Another quick French meal is steak au poivre, steak with peppercorns. This bistro fave just requires steak , then coating it in salt and peppercorns. It is quickly pan fried.Use the drippings and cognac along with butter, dark stock and shallots to create a yummy sauce. Serve with fries for a true Parisian meal. Croque monsieur is another easy dish. Basically it's just a fried in butter grilled cheese with ham. You can make a bechamel sauce for it or add an fried egg to create a croque madame. After a busy day, this is a fun dinner to make and also a satisfying one.
French cooking isn't all fancy dishes and complicated time consuming sauces. You can have a tasty Parisian meal in just minutes. Best of all it's also tasty and filling and just as good as any multistep Gallic dish.

Pie Charts
Just when I thought macaroons were the new thing, pie comes along and tops it. Yes, pie, that lovely homespun treat that our moms and grannies perfected.Nowadays people can't get enough of this traditional dessert. Pie shops are popping up everywhere. Let's face who can't resist this down to earth simple and simply delicious sweet.
Pie was one of the first foods mankind ate. Ancient Egyptians invented them then the Romans adored them and spread the recipe throughout the Empire. The English and French perfected the dish , first calling it boxes or tartes. Early Americans celebrated both sweet and savory kinds, varying the dish from the traditional British shepherd's pie thus creating delicious meat pies. Americans were also fond of fruit pies thanks to the abundance of wild fruit trees. Soon apple pie became a Colonial favorite and standard, served at almost every holiday and family event.
Today the dish comes so many variations . You can make a really nice custard filled one using any instant pudding and a ready made shell. There are also the traditional fruit ones such as strawberry rhubarb, and blueberry along with peach. Make these with the traditional flaky homemade crust. for a real treat. Sometimes the two fillings are combined as in a banana cream pie . Another favorite is pecan pie that combines chewy pecans in a gooey caramel like pudding. This has a variation in the walnut pies where one kind of nut is substituted for another.

Crepes Light Summer Cooking
Crepes are one of the most wonderful foods tha t the French have given us. They are versatile and can be made for lunch , dinner and dessert. You can make them as decadent or as healthy as you want. Best if all they are easy enough ad quick enough to whip up - a plus for these warm early summer days.
Surprisingly crepes are not just solely French. The Italians have a version of it called crespella,. Tortillas are a variatoin of it and the Asians introduced Europe to their buckwheat ones. These are still a favorite in Brittany where they're washed down with dry cider. White flour was introduced to the recipe at the turn of the 19th Century. They're divided into two type, crepes sucree or sweet crepes or savory gallettes, crepes salee. The batter is an easy one. It's simply milk, eggs ,water and flour beaten together and then cooked for two minutes on a well oiled crepe or frying pan. You can also cook them on a griddle too.
What you stuff into a crepe is your business. I love the versatility of them. Add sugar to the batter and you have the perfect base for any dessert. I usually like mine the street vendor way as they sell them in paris. This is just a slightly sweetened crepe spritzed with a little lemon juice and dusted with confectioners sugar. You can also fill them with jam, fresh fruit or ice cream for a really special dessert and let's not forget crepes Suzettes. For savory crepes now is the time to fill them with fresh veggies , especially ratatouille. This is is one of the best savory stuffings, although spinach and mushroom is a close second. Crepes filled with seafood and then covered in a sherry bechamel sauce is a lovely and elegant summer dinner. You can so have fill them with chicken in a light tarragon sauce too or for heartier fare ham with a cheddar sauce.
