A Good Rub

A good rub is essential to any pork or beef rib. I brings out the flavor of th e meat along with imparting a crunchy , crisp coating. A rub also holds in the juices, making the meat moist and melt in your mouth yummy.You can buy rubs or better yet make your own. They're easy to create and store.

One of the best recipes is the Kansas City rub. This town knows ribs ; it lives by them so what the local chefs put on them has to be special . Their rub recipe is a blend of spicy and sweet.It's a mix of paprika , and brown sugar with chili and cayenne thown in for added heat. Onion powder along with garlic is also mixed in for extra flavor. Memphis, another town , known for its' excellent ribs has its' own variety of rub . It employs dried mustard and basil along with the requisite garlic and onion powders for zest and zing. Chicago,a city known both for its' amazing food and meats also has a rub recipe. Theirs is simliar to the other two but also has parsley added for a different, earthier flavor.

The Caribbean islands are known for their rubs too. These can be put on everything from chicken wings to even turkey, from steaks to ribs. A popular one is made with granulated garlic along with brown sugar and a different herb this time - thyme. It also has chili powder and sea salt for added crunch and extra taste.One island, Jamaica, is really the king of rubs. The island produces so many recipes, it's hard to choose which one is the best. Jerk a spicy dish and one of the most popular starts off with a rub that includes white sugar, and native spices such as cinnamon,. cloves and allspice. Of course there is chili powder and garlic to give it heat. Remember that most rubs last up to four to six months in storage. You can make them now and use them even in the Spring. They'll still be good.

Add a good homemade rub to your next batch of ribs for some fire and crunch. It'll turn ordinary ones into a special meal. Make any recipe or create your own for a unique flavor!

Best Summer Treats Ever!

With July 1st comes the official start of the summer season (even thought it really started last week).This is one of the best times of year. Fresh fruit and veggies abound.Every weekend holds th e prospect of a yummy picnic or barbecue. There's delicious boardwalk and carnival treats not to mention contests at local fairs. It's one fun foodie week after another.

One of the best treats of the season is a good old fashioned tomato sandwich. All you need is just fresh, sliced tomatoes mayo and white bread. The best bread is a good sandwich white like Pepperidge farms or Arnold's and then liberally slather on mayo. Add thick slices of beefsteak, sprinkle with sea salt and freshly ground pepper and you have sheer heaven. It's a lovely combo of juices mixing with creaminess. Another sandwich treat is a good old fashioned off the grill hamburger , complete with fresh sliced onions, ketchup and lettuce. Of course ribs rank right up there as well. There's nothing like them barbecued, shining with a thick patina of homemade sauce.

Summer has a lot of sweet goodies too. This i s the time of year to take advantage of what's left of the strawberry and blueberry seasons as well as cherries. Of course summer is all about that perfect watermelon wedge, drippy,cool and perfectly sweet.It'sa refreshing respite when temps hit the nineties. Vacation time isn't vacation time without boardwalk or fair goodies. There's the sheer fun eating cotton candy and candy apples along with frozen custard in a cake cone. Another treat (especially here in New Jersey) are boardwalk candies, fresh made in candy shops thatare a mainstay of the Jersey shore . Happiness is a molasses pop or a haystack or a whole box of saltwater taffy made from recipes that have lasted over one hundred years.

This is the season for fun times and fun food. It's just great to kick back with a perfect burger to a fresh made cone of cotton candy. Enjoy the warm weather and starry nights along with some of summer's fun treats!

Vegan Barbecues

Vegan and barbecue somehow don't go together in the same sentence yet that's not true. Even meat free eaters can enjoy every summer treat a meat lover can. It's easy. To sum it up in one word tofu. There are so many tofu products right now that any vegetarian could have a better barbecue than any carnivore right now.



Luckily the variety of veggie burgers has increased over the last decade. Years ago they only came in one tasteless flavor. Now the patties taste like actual patties and have extras such as salsa , basil, black bean, tomato and even soy cheddar cheese thrown in.Some even have an already grilled taste. Add some ketchup, onions and tomato and you have a regular burger. Even better is that you can fools guests into thinking they're eating Angus beef when in fact they're gobbling down the very healthy good for them soy.



Not to be out done but some companies like the truly vegan Morning Star Farms have hot dogs too. Put these on the grill and they taste like Nathan's real beef kind. Granted they're not as juicy but the texture isn't bad and the ends do get nice and crispy if you split them. There are also ribs and chicken patties for variation along with Morning Star's newest creation the turkey burger. All of these are great for the barbecue and would make for tasty filling meals.



Yes , vegans can have a great time barbecuing. It's easy thanks to the wide array of soy products out there. In fact they might even convert a few carnivores during a grilling spree.
