Today is Derby Day a big celebration in Kentucky where Southerners revel in the glory of the Kentucky Derby. You have to hand it to Southerners. They know how to do a party right - inspiration for us Yankee party givers. Do a do Southern style - with good food and good drink. Everyone will love it.
Biscuits, always a favorite , can make an appearance at s Southern themed party. Serve them with bacon ,pimento cheese, a favorite filling in sandwiches. Another idea is homemade tomato jam top with cheddar, sort of like an American's take on bruschetta. Tomato jam is easy to make .It's just taking whole peeled tomatoes and half a cup of sugar and cooking into a jam boiled in a large skillet. A teaspoon of kosher salt is added to bring out the tomatoes' flavor. It's then cooked for about fifteen minutes until thick and jammy. Deviled eggs have always been a staple in almost every celebration and holiday. These are easy to make and can be decorated to look quite fancy. It's just taking the egg yolk and mayo mash and putting it into a cake icer with small tip (Like a Wilton decorating tip - number 199). Swirl in the filling into the halved egg whites and then dust with paprika or finely minced gherkins.Okra is a big staple in Southern cooking, especially in Louisiana where it's used in gumbo. It can take on a modern twist as a popper. It's simply cutting the stalks into one half inch pieces and first soaking them in buttermilk. They then are rolled in a spicy cornmeal batter that's been spiked with cayenne and garlic powder.
Barbecue is a way of life down South and it too is always the star of many a party.May barbecues have a whole roasted pig . This may be too much and too labor intensive - after all - a pit has to be dug to accommodate the spit and coals. Ribs would be a better choice. They're easier to cook and eat.Marinate them in a spicy and tangy sauce that's laced with hot pepper sauce and sweetened with ketchup and brown sugar to create an interesting marriage of flavors.. Barbecue and fried chicken are also staples of Southernn home chefs. Again brown sugar is added to the chicken's barbecue sauce for that earthy sweetness while chopped onion and garlic gives it some zing. The recipe calls also for ketchup but tomato jam could be subbed in. A fun party food is homemade fried chicken - what the South is all about. The best tasting ones start with a simple batter , consisting of just flour, eggs and a cup of milk. First soak the chicken in the milk and egg mix and then thoroughly coat with flour.Fry in lard for a truly authentic Southern taste. A Southern do ends with peach cobbler or banana pudding.If it's fancy then bake a traditional hummingbird cake.It's a banana - pineapple cake laden with pecans and cinnamon. It's iced with another Southern classic - cream cheese frosting . Serve it with after dinner coffee laced with bourbon for a fantastic ending.
The South knows how to throw a party with good food. Create your own Southern do with tasty fried chicken and biscuits, or barbecue and hummingbird cake. It's what entertaining is all about.

Nilla Wafers That Great American Classic
What makes the perfect cookie? Crunch , snap and flavor. Nilla Wafers, everyone's favorite cookie fits this bill. They are not only fun to eat with a big glass of milk but also neat to turn into a variety of yummy desserts.These vanilla snaps are not only a kitchen classic but a kitchen staple as well.
Nilla Wafers have been made by Nabisco for only fifty years but their story goes back to over a century to Staten Island, New York. German inventor Gustave A. Mayer, a 19th Century inventor moved his family and confectionery business to Stapleton in the northeastern corner of the island , This German neighborhood appreciated baked cakes and cookies and it was here that Mayer created molds for the sugar wafers that would eventually be known as Nillas. He was also an inventor , designing one of the world's first humidifiers along with preformed sigh letters and sparkling reflectors used as Christmas tree ornaments. Yet it was the biscuit molds that made him famous. and even was awarded a medal from the American Institute of New York for his many contributions and inventions to the industry. How Nabisco acquired the recipe is a mystery.Had they been sitting on it for half a century or did Mayer,s daughters finally relent and gave the recipe away in the mid Sixties? Strangely enough the cookies have always been made with synthetic vanilla or vanillin and not the real deal. Nabisco also makes a low calorie version that taste the same as the original recipe. One is only twenty calories . A small bag of them make a nice snack whether for work or for school.
The cookies are great on their own however they 're also a wonderful ingredient in many desserts. Banana pudding is a popular one , especially in the South. The recipe is an easy one.It's basically a trifle with layers of Nillas vanilla pudding or custard and sliced bananas. It's then topped off with whipped cream and crushed cookies.What I love about Nilla Wafers is that they make great crusts. They're easily crushed in a food processor and can be blended with nuts and melted butter for a shortbread inspired kind of crust for cheesecakes.The cookies also make great mini desserts along the lines of hors d'ouervres . Put puffs of coffee laced marscapone cheese on them or sweetened cream cheese and berries for a fun after dinner bite. Nillas make excellent cookie balls. Again these riffs on cake pops are a snap to whip up. It's just mixing the crumbs with cream cheese and then rolling the mixture into balls. Afterwards they're dipped in chocolate and then chilled for an hour. You can add in some fun morsels such as ripe mashed bananas, nuts,or chocolate chips. Try a tiramisu one with some coffee mixed into the recipe. These are great for a kid's party,Turn them into cookie pops, with dyed white chocolate.and a coating of gold and silver sanded sugar.

Just Simple Desserts
Put away those frostings and meringue topping .Summer is here and it's time to start paring down desserts. You no longer have to have rich tortes or trifles. This is the time of year for simple sweets - homemade cakes and crumbles that involve fresh fruit and cream. It's also a time to think easy - fridge cakes and 1-2-3 puddings.
If you do insist on baking or even buying cake think pound. A slice of any flavor of pound cake with fresh berries and Cool Whip is a nice touch to any summer birthday meal. Pound cake is relatively easy to make . The only real headache is heating up the oven for almost two hours on a hot day. However many markets sell freshly made ones from plain to chocolate chip to marble . You can easily buy one and then dress it up anyway you like. Cobblers and crumbles are also a snap to whip up and fun to make; especially if you have fresh picked berries or peaches to add to them.
If you want something fancier, look no further than fridge cakes and rice pudding. There are some quick refrigerator cakes to make that suit any occasion from shower to barbecue. The most famous one is the chocolate wafer with whipped topping This log is wonderful and you and do so many variations with it. Add mint flavoring to the cream before assembling. Or serving raspberries with it on the side. Another great recipe is the Nilla wafer cake that involves Nabisco;s Nilla wafers and vanilla pudding. This last has graced many a picnic table. Rice pudding is a simple summer dessert that can also be varied. You can add pistachios for an Indian vibe or almonds and lemon. Some go the traditional route with raisins and cinnamon.

Rice A Tility
Rice is one of the most versatile foods in the kitchen. it can be used a side , a main a dessert and a s flour. It can come in a variety of different types for simple or gourmet dishes. You can add anything to it from spice to sugar to make it unique and tasty.
Savory rice dishes are great for an evening and even a party meal. There' s nothing as sophisticated yet homey about risotto that perfect Northern Italian concoction made with arborio rice. Arborio is a little different than regular rice . The grains are shorter and fatter than regular rice and are also high in starch. This lends to the creaminess of such dishes as risotto Milanese, an easy and lovely saffron rich dish. Milanese and regular risotto (made with tomato and chicken gizzards) are good dishes during these snowy days.If you prefer a regular rice dish then stick with the spicy yet satisfying gumbo. The gumbo can be made first and then poured over white or brown rice. Another fun and excellent recipe is the party perfect paella. It's a blend of all sorts of meats from seafood to chicken to sausage along with peppers , corn and tomatoes. This is a great and again easy dish to make.

Down Home Cooking Sylvia's and South Carolina Cooking
if you want down home Southern comfort food then head to Manhattan. Yup, you've read right. new York City houses one of the most famous country cooking restaurants. the famed Sylvia's This Harlem and city landmark produces some of the best food that's reminiscent of Low Country cuisine. It's here where diners can become nostalgic for the tastes of their childhood.
it was started by Sylvia Woods who was originally from the South Carolina. The restaurant opened in the mid Sixties and has expanded to over the years. Celebrities from Bill Clinton to Nelson Mandela have enjoyed meals here and what meals!!!!I was lucky enough to have her chicken and ribs along with some collard greens and potato salad , These were cooked in traditional Southern style . The sassy rice a mix of rice and black beans was my favorite. I also love corn bread and there was plenty of fresh made slices . There was also platters of fried fish to. The meal was finished off with a scoop of banana pudding
Sylvia's has its' roots in South Carolina cooking. Outside of Louisiana, the Low Country was probably the most cuisine rich areas of the South. There are all sort s of recipes of different kinds of fish and seafood. Oysters abound here along with shrimp. Ham and ribs are also popular as is chicken. Sylvia's honors some of the recipes and creates down home goodness with them.
It's possible to eat in New York City and get a taste of Low Country cooking . Just head to Sylvia's in Harlem. You'll feel right at home and welcomed.
