The Crispiest Crackliest Pizza Ever

 What makes a good pizza? Surprisingly its' not the toppings. Or the sauce  or even the cheese.It's the crust that pizza lovers rhapsodize about ,Now there'sa recipe influneced by a famed pizza town to try that gives you the best crust ever.

Regular contributor and chef J Kenji-Lpez Alt wrote about this perfect pie in today's New York Times Food section.He gives tips and tricks on how home chefs can create the perfect Chicago thin crust pizza. THis is the one Chicagoans adore, not that deep dish one that's more like a pizza rustica.It's not like the beloved New York ones with puffy handlebar crusts. There is not crust really. The sauce and cheese literally stretch to the end of the dough with the cheese dripping over in crunchy burnt pieces.Most notable the true Chicago style is cut not in triangles but in bite sized squares that would be perfect as a cocktail party nibble.It was intentional. These bites would make people thirsty . The custom s tarted in the 1940's at such family taverns as Vito and Nick's in the South Side.It was also always free and loaded with sausage thnaks to the slaughter houses in the vincinity.Cracker crust pizza became so pouplar it was the pizza that became number one throughout the Midewest.

Any home chef can recreate this American classic. Chef LopezAlt give the recipe for both the crust and a homemade pizza sauce along with Chicago style sausage..The crust should have less water and more oil for a nice crackly texture.Another Must that he discovered quite by accident is leaving it out on the counter for too long. This produces overfermentation which severely weakens the gluten structure which leads to dough that refuses to rise when it's baked. This is bad for a loaf but perfect for a pizza.It can also be cured, a process developed by Billy and Cecily Federighi. It's leaving the dough out overnight so it dries out. This also produces a crackly crust. Then there'sthe sauce. Homebakers could get a bottle or jar of it but his sauce recipe is worth trying.It's a quick blend of whole peeled tomatoes and tomato paste plus the usual seasonings. The surprise lies in the adddtion of a  tablesppon of granualted sugar and two teaspoons of  red wine vinegar. You could also make the pizza with just the sausage/ This is a taking ground pork shoulder and mixing it with fennel seeds and garlic cloves along with various herbs like oregano and marjoram. You could easily make a CHicago style pizza.

Happiness is a good crispy pizza. Make this true Chicago style one to enjoy that crackle and crunch.it will be a memorable one for sure.

Pizza On The Grill

 We always use the grill for barbecuing, but you cn also use itr for pizza. This is a nice change up from all those hot dogs and burgers.It's perfect on a hot Weekend evening. topped with veggies from the garden

Thr great chef J. Kenji Lopez-Alt wrote about it along with giving a recipe for it in yesterday's New York Times Food section. Chef Lopez-Alt has had some experience in making these delicious pies.He created them for Cambridge 1 up in  Cambridge Massachusetts. Grilled pizza is made a little differently than oven fired. THe  store bought dough is rolled into a ball and then dipped in a bowl of olive oi for an hour or so of proofing. It's then  dusted with flour , rolled out an carefully draped over the grill. Both sides must be baked first before putting on the sauce and cheese on.As  for the sauce Chef Alt-Lopez recommends a pureed plum tomato mix which has bits of tomato in it.The mozzarella should be a low moisture one or shredded Once topped, the pizza is returned to the gill to melt. If you're adding meat or seafood toppings make sure they're cooked, Finish with a drizzle of olive oil ad a good sprinkling of chopped basil or scallions.

Pizza fresh off the grill is a nice change off from all those burgers and dog. It 's the perfect meal for a summer Saturday or Sunday night. Have it with a salad and a cold drink for  the best outdoor meal ever.

Can Do Can Don't

Our diets now consist mostly of canned food. It's convenient during these times and for the most part tasty. Can we live on canned food? Will it be just as good as fresh? Can it last us through this self containment period or will it go bad after a few weeks?

This is a big question many of us are going through. Let's face it food shopping today is not the leisurely trip it once was.It's a quick grab for whatever's left on the shelf and then a quick scoot out. Some of what we'll buy now can last us well after this pandemic is over. This was the subject of an article in Wednesday's New York Times. It was written by famed chef and food writer J. Kenji Lopez-Alt. He explored a variety of shelf lives for different foods, from spices (which can literally last forever) to flour ( which lasts long too) and foods that never have an expiration date. These are vinegar, honey vanilla, molasses and corn syrup. Salt and pepper never expire either. What about those cans? As a rule metal lasts longer than glass which lasts longer than plastic. There are some tinned foods left from century old Antarctic expeditions that are still edible. The only food that has to be opened by the expiration date is baby food. Canned food can last for years so what you buy now will still be good two to three years for now. The same is true for canned soda which will still keep its' fizz for twelve months or more.

 Do check, however on the can's appearance when you go food shopping. Don't buy if the can is bulging or rusting. Those are two very sure signs of spoilage. Even canned meats like deviled ham and chicken will last for years along with canned tuna , salmon and crab. Tuna in oil will also last long too so you can stock up now and use it for salad Nicoise over the summer. As for jarred foods,you can see if the product is spoiled if the lid's  center pops up in the middle. This definitely means spoilage.Canned foods are also as versatile as their fresh counterparts. Canned corn can be tasty side dish served hot with a butter sauce but it can also work well in a salad too. Use fresh chopped peppers to turn it into fiesta corn. Green beans can be graced with an almondine sauce or flavoring minestrone soup. Keep in mind that canned meats can be made into a variety of different dishes. It may garner smirks and giggles but Spam is transformable into anything.Turn it into a breakfast omelet with some eggs and cheese. Spam burgers can be fun and you can even create Spam fingers in your air fryer. Serve with a barbecue sauce for a different kind of dinner. As for canned fruit, buy the healthier choice  which is fruit packed in water instead of syrup. Mostly this is peaches -versatile for desserts and snacking and fruit salad. Think canned peaches and vanilla ice cream on waffles for dessert.

Canned food is a staple in our lives these days. We need it and will need it for months to come. Choose cans wisely and turn them into delicious meals.
