New Year New Trends

 Every January First there are so many predictions about what's going to be hot and what's not. the same applies to food and drink. What's going to be the number one taste treat? What's emerging? The year rwill tell.

Regulr contributor Kim Severson compiled predictions and trends in yesterday's New York Times Wednesday Food section. One trend which can be called nonna-stalgia or grandmacore is the return to comfort foods.People will be craving and eating dried apples, homemade sourdough bread and sauerkraut. Newer generations will be embracing canned veggies, another trend will be regarding texture. Crunchy and chewy are the new buzz words. Thanks to Crunchtok Tiktok trend shattered pastries like croissants and freeze dried candies that burst when teeth touch them are going to be super popular. Andrew Freeman, the president of AF and Company ,a San Francisco consulting firm. states that this is the generation of fluffy, smooth ,crunchy and melty. Chewy will be the next trend since everyone likes a gummy texture.Another trend is using what's in the backyard.Yaupon tea, brewed from the leaves of the holy tree and found in the southeast US is being touted as the only tariff free caffeine drink in the country.There are sodas and margaritas that feature the pawpaw that has a tropical fruit taste of coconut mixed with mango, banana and coconut.

Kitchens will also star in 2026's trend scene.Beauitfully crafted olive oil bottles or a collection of sardine tins can now be used as decor .Whole Foods Market is calling it "kitchen couture<"According to Alan Chen , the chief executive at Taste wise what foods comes in can define the home chefs themselves.There is an ingredient of the year and even vegetable of the year. The first is vinegar, The quality and styles of the condiment will continue to expand. Chefs already spritz thyme vinegar on warm cookies and combine the red wine type with Kombu jelly for raw veggies. It's a staple in Filipino cooking which is taking hold here. The veggie of the year is cabbage!!!! Braised conical cabbage and kimchi were the popular ones in 2024 but now America is deepening its crush on this versatile veggie.Neurodivergent diners will find that there will be more sensitivity. More places will pay attention to light , texture and sound and how they affect diners. There will also be trips to gather ingredients like fresh mushrooms and even help in preparing their food.Value and smaller batch restaurants will also figure large in the upcoming year. Dinners want good quality and being pamperedin a smaller setting where the focus is on them and not on the crowd.

2026 will be an interesting year for both food and eaters. THere will be old recipes and new tastes. It's going to be a fun twelve months for both chefs and diners.

A Lucky Open House

One of the hallmarks of New Year's Day is an Open House. This is where everyone is invited to celebrate with a delicious meal and a drink.It's a neighborly way of celebrating with those on the block or with family and friends. the foods should have some symbolism to them to ensure luck for the new year.

Regular cotrniburtor David Tanis gives a whole menu for the perfect Open House in today's Wedesday 's New York Times Food section.Black eye peas are usually the star of any New Year's Day dinner. They symbolize good luck in for a brand new twelve months. Thjey're also easy to cook, even the dried ones.The beans (which is what they are) are cooked with some kind of meat. Southern home chefs usually cook them with flavorful ham hocks or even smoked turkey. Mr. Tanis uses the tastier pork belly with them, The meat has a dry rub of salt,paprika fennel and pepper. The pork belly is  cooked in a large Dutch ovenas the black eyed peas are cooked separately. What goes with them is a mix of chopped kale and mustard greens that have been simmered in garlic flavored oil. They are cooked until they wilt  after apple cider vinegar has been added to cut the flavor. The pork belly us cut into chunks and then added to the peas and greens.Mr. Ranis offers a side dish of cabbage salad with jalapeno lime dressing.Red radishes and sliced avocados are also added for bite and creaminess.

Every New Year's Open house should finish with something sweet to ensure a sweet new year. Mr. Tanis has a great recipe of spiced apple fritters with one fo the year's biggest trends  - hot honey. These can be made before the main meal since they shouldn't;t be eaten hot.It's apple chunks mixed in with spicy mix of cinnamon and allspice in with flour, baking powder for life, salt and sugar. The apples which can be any kind should be diced and peeled. These frittrers are unusual because they're baked fried in a Duitch oven. in a 375 degree  Fareneit preheated oven. Let the fritters cook until they puff up for two to three minutes and then let them drain on paper towels. Repeat until all the batter is gone. Mr Tanis suggests first dusting them with cinnamon sugar or confectionr's sugar. They can be drizzled with already made hot honey. This is taking warm honey and mixing it with both a quarter teaspoon of  cayenne and a teaspoons of crush red pepper.It should be steeped for a few hours before serving with the fritters.

Welome the New Year with delicious food , full of symbolism and taste. It;s a great way to welcome 2026 and neighbors. Everyone will love this first meal of the New Year

Your New Year Your Food

 It;'s New Year's Eve tomorrow and that means fancy parties and fancy foods. Yet supposedly just want a cozy celebration with either you or with a companion - whether animal or human. It;'s your New Year - your food.

It's a time when you can just splurge on whatever foods you want to eat.Lidl has a wide assortment of extravagant foods at affordable prices. Take a look at their Preferred Selcetion choices. A small Culver duck is only $34.99 and comes with a packet of orange sauce (which you can spruce up with orange juice and brown sugar). They also offer a shrimp ring for only $6.99  and some stores also have lobster. Other stores like Acme and Stop and Shop also have excellent seafood if you so choose. Indulge in crab legs with butter sauce or some coconut shrimp. You could also have petite filet mignons  again, many stores such as Walmart offer them for under twenty dollars. Serve with steamed broccoli or carrots for a simple yet elegant meal. Crack open a bottle of Prosecco or a good wine for a great drink. It's also a good night for cocktails and mocktails. try one you;'ve been dying to taste. Have two bottles of seltzer and a bottle of cranberry juice. These make the best bases for both alcoholic and non alcoholic drinks.

Of course since it';s a small party fun food can abound. Think hot dogs and or hamburgers. Barbecue if your climate is warm enough. Try the famed Chicago dragged through the garden dogs.This is a hot dog, sharing a bun with fresh sliced tomatoes, pickles , chopped onions , small pickled peppers called sport ones along with neon green relish and mustard (Ketchup is strictly not allowed) Chili dogs are another fun dinner. You could also serve bacon cheese burgers, air fried to perfection.What about sides with these?. Frozen onion rings or fries that can easily be crisped up in the air fryer too. Another tasty treat are wings. You can have them extra hot Buffalo style or with lemon pepper.Nuggets are fun along with popcorn shrimp. These are nibbles that you can have with good craftsman soda or beer. Think Wild Bill's or Abita's root beer or a good woodsy birch beer such as Boylan's Beers, could be IPAs or APAs.As for dessert- again indulge in what you want. It could be cookies or a sundae with homemade hot fudge and decadent ice cream such as Lidl's. 

It's your New Year's . Celebrate with the foods you want. It could be fancy .It could be just fun. Ring in the New Year with great flavors and great tastes.

A Warming Stew

 This is the time of year when a good stew is needed. It should go right to the heart and warm everything after a chilly day. One is a simple veggie stew with the addition of Berbere spice . It may be exotic but there's something homey and comforting about it's earthy deep taste.

I used it when I made a large vegetable stew the other night. I wanted something exotic and delicious- something different than the usual garlic and oregano mix.. I mixed with with onion and garlic powders


I used about three heaping tablespoons of it compared to a teaspoon each of the other.The base of the stew is olive oil and Country Crock plant butter.







As for the liquid a whole container of Acme's Organics vegetable broth does it otherwise the veggies can be too intense.

Shallots were first added sauteed in the oil and butter 



As for the veggies. Everything was thrown in the pot. I have an excellent fresh market in my neighborhood. Japanese eggplants, cucumbers, tomatoes ,orange bell peppers and  cubed boiled potatoes were first sauteed and then bathed in the broth.It did need protein.

Red beans and their water were added to it.

It took maybe half an hour of cooking to thoroughly cook the veggies and gravy. You could add some peanuts to it for a more African vibe.


It was an excellent bowl of warming goodness. The Berbere spice adds a whole new layer to the various vegetable flavors. I would recommend using it in a dry rub for chicken too. The stew was the perfect dish on a cold December night.,

A warming stew with exotic  spice is the perfect antidote for a chilly evening. Make it and enjoy a delicious spoonful of heat and flavor. It's perfect for this season.

That Other Holiday Bread Pandoro

 Everyone knows that seasonal favorite panettone.It's that large Northern Italian based sweet bread. People either love it or hate it's slices dotted with raisins and orange peels bits. Most pick those out. However there is bread's simpler version  - pandoro or "golden bread". This elegant  bread is simply heaven on earth thanks to the amount of butter used in it.

Fashion designer and New contributor Christopher Petkanas wrote about this leavenly bread in Wednesday's New York Times Food section. Pandoro is  a favorite treat  during the holidays (there is an Easter version 'Colomba Pasquale a dove shaped bread filled with creme Anglaise.)Ot is a tall star shaped bread that is meant to be sliced horizontally and dusted with the powdered sugar that comes with each b read.It's more like a giant brioche, both in crumb and flavor.Few bakeries bake it .There is  Settipane's that has branches in Brooklyn, one in Harlem and Bruno's in Freehold ,New Jersey . They create pandoro as well as panettone, however they only bake about one hundred of one while they mass produce about four thousand loaves of panettone this season.Pandoro is not as known as its' cousin,.The company's chief baker, Bilena Settipane wishes more people would come to appreciate it. She suggests serving ti with marmalade, nociola, pistachio spreads vin Santo and even gelato. To be honest pan doro is just good sliced as a luxurious breakfast or snack,

.Can it be made at home? Yes , but it is is difficult according to Roy Schvartzapel whose company From Roys' supplies panettone in California and will be introducing pandoro shortly. It shouldn't even be a recipe because it has no leavening. The delicate enriched dough uses a starter or biga , a mix if yeast and flour that has to be mixed with a few drops of water. The second dough or the bulk of the bread is made from flour granulated sugar,honey egg yolk and lemon zest. Vanilla and salt are also added   . After this is mixed  half cup of melted butter is slowly added to the dough and mixed in.The special pan also has to be buttered and then the bread has to be proofed two times There is also factoring in the right ambient temperature and humidity.this could result in a gummy texture and an informed crust. It takes seven to nine hours in total but two days  or more is more traditional according to Iginio Massari, the universally known high priest of panettone. Home bakers also don;t have access to vanillan, one for the preservatives that can lengthen pandoro's shelf life.

Pandoro is best when  bought and it still can be during this time of year. Buy it for its' truly heavenly taste. It is a different, more buttery spin on panettone.

Return To The Gilded Age

 It was bound to happen. Blame it on the popular HBO series "The Gilded Age" or Trump's tarting out the White House to resemble a gaudy Newport summer home. What is this trend?Restaurants offering glitzy and lush dishes in a time when most are struggling.

Regular contributor and chef ,herself, Julia Moskin wrote about this in Wednesday's New York Times Food section.Despite the economic downturn and food struggles of a very large portion of Americans,Manhattan eateries are featuring recipes that would be very in place in Julian Fellowes HBO series about the real life Astors s and Vanderbilts and the fictional Van Rhijn family. Silver paplates across the city are suddenly discovering the lush and sometimes delicate flavors of foie gras, Dover sole and seafood towers, the last chock full of the Gilded Age favorite  - oysters,flanked by shrimp and lobster. There are also towers featuring hipper tastes like crudo)seafood drenched with olive oil and citrus juice like ceviche)toro fatty bluefin and the best cut of the fish and uni - sea urchins. The restaurant Le Grande Boucherie is offering a suckling costing $600 (!!!!). The Waldorf Astoria's refurbished restaurant Lex is offering a sixty-eight dollar lobster covered with caviar and truffles.

There have always been rich people spending exorbitant amounts of cash on food yet today that spending is reaching dizzying heights.Expensive places to eat just aren't in Manhattan anymore. Travel to  Dallas, Las Vegas, Miami and Aspen and order truffles or  Wagyu beef. Parc in Aspen offers celebrities and millionaires offers the last at $120 a plate while a simple dish of polenta with oyster mushrooms and afarm egg(??) is twenty-eight dollars.It seems lesser prices restaurants are jumping on this trend too.Some are pairing caviar with potato chips or even chicken nuggets at Cocodaq, an innovative Korean restaurant in Manhattan's Flatiron district.  This last sold the combo for one hundred bucks a box!!! last summer at the US Open. It's no secret that most of the country can barely afford groceries let alone expensive nuggets. EConomists are calling it "K shaped economy with two tren likes diverging in opposite directions. Income and net worth have risen rapidly for the one percent, namely those working in the tech business. The less affluent are the victims of a stagnant economy and inflation. Yet offering high priced meals with extravagant ingredients are the only way to stay afloat according to pastry chef and partial owner of Manhattan restaurant Contra, Fabian Von Hauske Valtiera.

There will always be be the rich. They need to eat too. Yet they do it in disregard to what is happening around them.It seems eateries are for them these days.not the hardworking American.
